9 The extracted juice of Ambarella and star fruit concentrated by Progressive freeze concentration (PFC) and Evap orative concentration to find out the best concentration method in terms of maintaining original quality of the juice. PFC is a novel freeze concentration technique which uses simp le cy lindrical ap p aratus which op erates at -240C temp erature. The Brix value of fresh Ambarella Juice and Star fruit juice concentrated by PFC up to Brix and from initial Brix and resp ectively . Ambarella and Star fruit juices were rotary evap orated at 60 1 0C temp erature and concentrated up to Brix and Brix Total Vitamin C content was determined by UV sp ectrop hotometric method based on the oxidation of ascorbic acid.
10 The total Vitamin-C content of fresh, reconstituted samp le of Rotary-evap orated and PFC Ambarella juice resp ectively were mgL-1, mgL-1 and mgL-1. For star-fruit juice it was , 13 and The total vitamin loss by evap orative concentration and PFC for Ambarella juice and Star-fruit juice were 18%; and ; resp ectively . Comp ared with Evap orative concentration PFC is a suitable method for concentrating different fruit juices to maintain their original quality .
