1 Breakfast Choose one of the Breakfast recipes that follow or one of the alternative options in the table. 2 Egg scramble And 1 serving of fruit Vanilla Greek Yogurt with Fruit and/or nuts 1 cup Steel-Cut Oats w ith Milk, fruit and/or nuts and seeds Your choice of smoothie or shake Some options to try: Mushrooms, onions and tarragon Red and yellow peppers, cherry tomatoes and basil Plus One piece of fresh fruit Some options to try: Bananas, blueberries and honey Almonds, honey and cinnamon Strawberries, walnuts and bananas Some options to try.
2 Almond milk, sliced bananas and sliced almonds Almond milk, blueberries and strawberries Coconut milk, shredded coconut and sliced peaches See smoothie section Greek Isles Omelet Ingredients: 1 tsp olive oil 1 clove or 1 tsp fresh chopped garlic cup chopped yellow onion cup baby spinach leaves 2 large eggs, beaten 2 T goat cheese, broken into pieces Salt and pepper to taste Instructions: Heat the olive oil in a medium skillet over medium heat until hot. Add the garlic and onions and cook, stirring often, just until the onion is transparent, about 2 minutes.
3 Add the spinach leaves and cook for 1 more minute, stirring constantly, then slide all of the veggies onto a cutting board or plate. Turn the heat to medium-high and once hot, pour in the eggs, tilting the pan to spread the eggs evenly. Once the edges are dry and just the center is still moist, use a spatula to turn the eggs over. Spoon the veggies onto the right half of the eggs and fold the left half over. Slide the eggs out onto a plate, top with the goat cheese and season to taste with salt and pepper. Tropical Yogurt Parfait Ingredients: 1 ripe mango, diced 2 T unsweetened shredded coconut One 6-ounce container of vanilla Greek yogurt 1 tsp chopped walnuts Instructions: In a small bowl, gently combine the mango and 1 T of the shredded coconut until fairly well-blended.
4 Place 1/3 of the yogurt in the bottom of a glass, then top with of the mango mixture. Repeat these layers one more time. Spoon the remaining yogurt into the glass and top with the remaining coconut, then add the walnuts. Heartwarming Oat Bowl Ingredients: cup steel-cut oats tsp salt Water cup plus 2 T unsweetened vanilla coconut milk 1 T chopped walnuts cup raisins tsp cinnamon 1 T real maple syrup Instructions: Cook the oats and salt with one half cup of the water called for in the recipe replaced with the coconut milk.
5 Once you bring to a boil and reduce the heat to low, stir in the walnuts, raisins and cinnamon. Cover and cook as directed. Spoon the oats into a bowl, pour the maple syrup over and top with the 2 T of remaining coconut milk. Serve piping hot. Peachy-Vanilla Protein Smoothie Ingredients: One 6-ounce container vanilla Greek yogurt cup cold water tsp vanilla 1 medium ripe peach, peeled and sliced Instructions: Place all of the ingredients into a blender and blend on high speed until smooth and creamy. Creamy Berry-Vanilla Protein Pudding Ingredients: 12 ounces cold water 1 scoop vanilla protein powder tsp nutmeg 1 T chia seeds cup fresh blueberries, strawberries or raspberries Instructions: Place the water, protein powder and nutmeg into a blender and blend on high until smooth.
6 Add the chia seeds and blend on low speed for 30 seconds. Divide the mixture between two bowls. Cover one with plastic and put in the fridge for dessert or tomorrow s Breakfast . Top the remaining pudding with the berries and enjoy.
