2 Food will be bought in fully prepared and packaged from external suppliers and either served cold or heated through the use of a flat-bed panini toaster. Hot drinks will be provided through a bean-to-cup machine and cold drinks will be provided via a refrigerated cabinet or slush machine. Pre-frozen fruit smoothies will also be provided and ground floor vending machines will also provide snacks and canned/bottled cold to the Operations Director, the Caf Manager is responsible for the day-to-day operation of the mezzanine caf and mezzanine and ground floor viewing areas, including vending machines, guaranteeing the highest standards of hygiene, safety and customer service.

3 This includes the supervision of staff to enable the smooth operation of the caf and viewing areas and close liaison with the Activities Manager for the provision of food and drink services to parties and corporate responsibilities of the Caf Manager include: Taking full responsibility for the effective operation of the caf , viewing areas and vending machines including cleanliness of customer areas and restocking. With the Operations Director, reviewing sales performance regularly, agreeing targets for improvements and identifying strategies for retaining and attracting new customers and building sales and profitability.

4 Reviewing the menu in collaboration with the Operations Director including the setting of price margins and the trialling and promotion of new products. Ensuring that all caf staff are fully briefed about menus, offers and other operational information. Working with the Activities Manager to contribute to the growth and effective delivery of parties and corporate events. Working with the Centre Manager to monitor and manage all maintenance issues. Promoting and practising relevant health and safety, food hygiene and fire safety standards. Ensuring that accurate cashing up and cleaning procedures are carried out at the end of each night.

5 Carrying out supplies ordering, ensuring the full availability of the menu at all times, together with the processing and logging of invoices. Maintaining effective stock control, storage and rotation to minimise wastage. Monitoring sales and stocks on an ongoing basis including monthly stock checks. Reviewing suppliers and prices on an ongoing basis to ensure value for money. Management and full understanding of the caf POS systems including the production of reports from the system. Providing visible leadership to Caf staff, ensuring they are motivated and operate to the high service standards expected.

Ensuring compliance with all organisational policies and procedures, including those for finance and revenue protection. Controlling and managing of enquiries, complaints and emergencies including administering First Aid as required. To undertake any other duties commensurate with the post s level of responsibility.
