JIFF-SAlways keep your fingers inside the hand guard and your thumb securely on thethumb rest indention on the top of the sharpener; otherwise possible injury may sharpen the knife place the knife on a solid flat surface withthe cutting edge facing up. Securely hold the knife in place withdownward pressure on the handle. For best results allow about1/2 to 1 of the blade to extend past the edge of your flat Fig. near the handle of the knife place the V in the head of the sharpener overthe cutting edge of the knife. Position the head of the sharpener at a 90 degree angle tothe knife s cutting edge.
2 While holding the knife with one hand and the sharpener inthe other, draw the sharpener across the blade from the heal to thepoint while applying light downward pressure. At the end of eachstroke continue your outward motion in order to avoid any contactwith the blade. You will feel the tungsten carbide cutters removingmetal from the knife. Repeat this process 3 or 4 times or until yourknife is sharp. See Fig. , light p ressure i s sufficient when u sing t he sharpener. Heavy p ressuremight cause you to lose control of the knife and could cause possible carbide cutting heads are reversable and heads stop cutting they can be rotated and used on the otherside. To rotate the heads remove the screw and the plastic coverpiece.
3 Remove the carbides and rotate them 1/2 turn and thenplace the top carbide into the bottom slot and the bottom carbide intothe top slot. 6 We recommendSmith s Premium Honing Oil as the best lubricant. Itis mineral-based and completely safe. If necessary,water can be used as a substitute. PROPER Sharpening ANGLEThe hardest part of Sharpening any knife is holdingthe blade at the correct angle to the stone. Smith sSHARPENING ANGLE GUIDE takes the mystery out of Sharpening . Place the yellow guide on theend of your stone, and then rest your knife bladeon top of the guide. This will show you the correctangle to hold your knife while Sharpening . Theguide doesn t move with your blade, it is only usedto show you the correct angle. Once you arecomfortable that you are using the right angle, it isno longer necessary to use your ANGLE GUIDE.
7 CLEANINGC leaning the stones will keep the pores free ofstone and metal particles. After each use, theArkansas stone should be cleaned by scrubbingvigorously with water, liquid soap, and a stiffnylon INFORMATIONSHARPENING a small amount of Smith SHONING OIL (or any light oilor water) on your stone. Don t usea lot of oil, as our HONING OIL ispremium refined and a smallamount goes a long way. Using aNatural Stone without oil or waterwill damage and clog your insure the proper sharpeningangle on your knife place theyellow Smith s ANGLE GUIDE atthe end of your stone. 8 N e x t , p l a c eyour blade flat on the ANGLE GUIDE at the end of thestone. Now you are ready to begin the the blade away from youjust like you are trying tocarve a thin slice off the top of thestone. Also, don t be afraid to usepressure against the stone whilesharpening since it will not damagethe stone or your knife. Repeat thispushing stroke three or four times. Remember, try tokeep the same approximate Sharpening angle all thetime since this is the key to getting the sharpest sharpen the other side ofyour knife place your blade a t t h e o p p o s i t e e n d o f y o u r stone and repeat steps 2 and 3, butinstead of pushing the knife awayfrom you pull it towards you asshown.
