This classification does not relate to the acid taste of the food but to its end-product in the body. The acid foods are those that deposit the highest alkaline ash of all foods. The acid in these foods leaves the body within an hour or so of being eaten. The following lists therefore classify alkaline -forming and acid -forming foods. acid below = acid -forming and alkaline below = alkaline -forming. For example, if a food is listed as acidic, it promotes and acidic environment in the gastrointestinal tract. If a food is listed as alkaline , it promotes an alkaline environment in the gastrointestinal tract. Whole grain products, such as 100% whole wheat flour and brown rice are less acid -forming than white flour or polished rice.
