Happy New Year Edgewood Country Club Members! 2018 draws to an end with what turned out to be a fantastic December for your Club. Even with fewer members this year than last, we experienced fantastic participation throughout the month regarding Banquet Events as well as Member Dining. Food and beverage revenues for December 2018 exceeded last years revenues! Thank you once again for the continued support of your Country Club. 2019 brings with it some temporary changes in our day to day clubhouse and dining operations.

2 As in the past, the clubhouse and dining rooms will be closed for yearly upkeep and maintenance starting on Tuesday, January 1st. We will reopen for lunch and dinner service once again on Tuesday, January 8, 2019. Though the Fitness, Spa, and Squash areas will remain open during the shutdown, please note there will be some renovations being done in the squash courts. Access to these areas will be available through the keypad entry system. We greatly appreciate your patience with us as we finalize these projects. As we move into January , your ECC Committees and management team will finalize member events planned for 2019.

3 A. preliminary outline is provided in this publication. The goal is to have the entire calendar year filled with events from golf, dining, swimming, tennis and squash events and programs. We will have this list finalized and published in February's newsletter so that you can plan will in advance to attend many throughout the year. While you await the list of activities, there is one event planned for in January that I would like to point out. For the Bourbon enthusiast, we will be hosting our 3rd Bourbon Tasting Event on Friday January 25 th. Be prepared to make an early reservation for this event as it has SOLD OUT with each of the previous event nights.

My staff and I are in the planning phase of more club events in the upcoming year, as well as new menus in all dining areas. Join us in the New Year for Build-a-Flatbread! . The continuous chill, and temperature drop 2 Cups Black Beans, picked over and soaked 4 hours force me to be more into hearty soups this 1 Qt. Water 2 Ea. Ham Hocks, or 1 ham bone time of the year. A family favorite at my 1/2 Lb. Bacon, diced house is a Spiced Black Bean Soup.

6 1 Lb. Chorizo or Andouille sausage, diced in 3\4-inch cubes 2 Ea. Onion, diced This spiced Black Bean Soup has a little 4 Ea. Garlic cloves, chopped Spanish influence with chorizo sausage and 4 Ea. Jalapeno peppers, seeded and finely chopped cilantro and enough heat to remove the (I suggest you wear latex gloves when working with the peppers). 4 Tbl. Cilantro, roughly chopped frost. To Taste Salt and Pepper To Garnish Sour Cream, optional Drain and rinse the beans. In a four-quart stockpot, add the beans Food is Life and simmer in the water with the ham hocks until tender (approx.)

Next, in another soup pot over medium heat saut the diced bacon and Executive Chef sausage until cooked and add the onions. Cook for four minutes over medium heat and add the garlic and jalapenos. Remove 1\3 the mixture and puree in food processor and add back to the pot to help thicken the soup. Ladle into serving bowls and garnish with a dollop of sour cream and chopped chives.
