FSIS Compliance Guidelines Allergens and ingredients of Public Health Concern: Identification, Prevention and Control, and Declaration through Labeling April 2014 2 This document provides guidance to assist establishments in meeting Food Safety and Inspection Service (FSIS) regulations. Guidance represents best practice recommendations by FSIS, based on the best scientific and practical considerations, and does not represent requirements that must be met. Although FSIS is requesting comments on this document, this guidance represents FSIS s current thinking. FSIS encourages establishments to use it. Request for comments: FSIS requests that all interested persons submit comments regarding any aspect of this document, including but not limited to: content, readability, applicability, and accessibility.
